And you thought raw foods was all almonds and celery sticks.
Some (non-raw) friends and I satisified our sweet tooth Friday night with some dessert at Ahimsa, a raw/vegan restaurant in New Haven.
I had a hard time choosing between the raw ice cream, macaroons and applie pie. So on the waitress' recommendation I went with the pie. It was made with a crust of flaxseeds, nuts and dried fruit, topped with finely chopped apples and spiced with cardamom. Two of my friends each ordered the lime mousse tart, rich and thick and made with avocado. They were a little pricey (mine was $10). But they were absolutey yummy, and we savored every last crumb.
At a decadent $1 a bite, we darn well better have.


Thank you, Su! I appreciate the suggestions. I do love soup, and I'm only going about half-raw. And I'm getting the idea I'd better get a dehydrator, hoping they aren't too expensive. Thank you again!

Jampa, that pulp is ground so small you can also plop it right into the garden without composting it first. Dig a hole, dump it in, cover the hole. It will break down quickly.
I hear you should wait at least a month before planting in that spot.
I have seen a few recipes for pates that call for carrot pulp, and I bet it could be used for veggie crackers in a dehydrator.
The other thing some people do is use veggie pulp for making broth - not raw foodists, of course. Boil, strain, and then dump the solids into the garden or composter.

Joann, that apple pie looks yummy! I'm looking forward to discovering Ahimsa. (Aren't we all?) Thank God, my brother bought a juicer yesterday and I can now have fresh vegetable juices. My young son drank down a glass of carrot-apple, and I had a robust cabbage-kale-carrot. This morning fresh vegi-fruit juice was the first thing my eight-year-old asked for. Good deal!! Does anyone bake or otherwise use the produce pulp? I'd be interested to know. At this point, I'm putting it on the compost pile. We tilled our little garden the other day and it's ready for planting. Some for us, some for the rabbits, some for us, some for the rabbits...which is the way I like it.
